Eve’s Pecan Zucchini Bread

  • ½ tsp lemon juice
  • 3 egg
  • ½ c canola oil
  • ½ c sour cream
  • 1 tsp vanilla extract

Blend above in mixer

  • ½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 3 c all-purpose flour
  • 2 c sugar

Add blended liquids into dry ingredients in a large bowl.

Blend – do not over mix.

  • 1 c roughly chopped PECAN YUMMIES
  • 8 tbsp Yummie Crummies
  • 2 c shredded zucchini (drained)
  1. Add shredded Zucchini first and then the chopped 
  2. PECAN YUMMIES.  
  3. Fold in gently.
  4. Divide in half and Pour into 2 greased 9 x 5 loaf pan. 
  5. Top each loaf with 4 tbsp YUMMIE CRUMMIES!
  6. Bake in preheated oven at 350 for 55-60 minutes.  
  7. Let Cool for 15 minutes.
