- 1 orange – remove both ends, then cut in 8 pieces
- ½ c. orange juice
- 1 egg
- ¼ c. canola oil
Blend above in blender until smooth.
- 1 ½ c. white whole wheat flour
- ½ c. sugar
- 1tsp baking powder
- 1tsp baking soda
- 1tsp salt
Add blended liquids into dry ingredients into bowl.
Blend – do not over mix.
- ½ c. chopped cranberries (craisins)
- ½ c . roughly chopped PECAN YUMMIES
- Add Craisins and PECAN YUMMIES.
- Fold in gently.
- Pour into greased muffin tins.
- Top each muffin with YUMMIE CRUMMIES!
- Bake at 375 for 15-20 minutes or 20-25 if using jumbo pan.
