Ingredients
Base
- 1 cup of All Purpose Flour
- ½ cup of chilled butter, cubed
- ½ cup sugar
Filling & Topping
- ¾ cup Smucker’s Pure Peach Jam (any variety)
- 3 tbsps sugar
- 2 egg whites
- 1 ½ cups of Pecan Yummies (chopped)
- ½ cup Yummie Crummies (combine with Pecan Yummies)
Directions
- Line 13×9 baking pan with foil. (leaving overhang to lift out)
- In Bowl, Combine fluor and sugar with pastry blender, cut in butter until crumbly.
- Press evenly in bottom of prepared pan and bake 350 F for 15 minutes or until slightly brown; cool slightly.
- In small bowl, beat egg whites until soft peaks form; gradually beat in 3 tbsp sugar until stiff and glossy.
- Fold in 1 cup Pecan Yummie /Crummie nuts.
- Spread jam over shortbread layer, and drop spoonful of meringue over jam; spread gently and evenly. Sprinkle with remaining nuts.
- Return to oven and bake 25 to 30 minutes, until top is lightly brown
- Cool completely before cutting into squares.
