Ingredients      

Base

  • 1 cup of All Purpose Flour
  • ½ cup of chilled butter, cubed
  • ½ cup sugar

Filling & Topping

  • ¾ cup Smucker’s Pure Peach Jam (any variety)
  • 3 tbsps sugar
  • 2 egg whites
  • 1 ½ cups of Pecan Yummies (chopped)
  • ½ cup Yummie Crummies  (combine with Pecan Yummies)

Directions

  1. Line 13×9 baking pan with foil.  (leaving overhang to lift out)
  2. In Bowl, Combine fluor and sugar with pastry blender, cut in butter until crumbly.
  3. Press evenly in bottom of prepared pan and bake 350 F for 15 minutes or until slightly brown; cool slightly.
  4. In small bowl, beat egg whites until soft peaks form; gradually beat in 3 tbsp sugar until stiff and glossy.
  5. Fold in 1 cup Pecan Yummie /Crummie nuts.
  6. Spread jam over shortbread layer,  and drop spoonful of meringue over jam; spread gently and evenly. Sprinkle with remaining nuts.
  7. Return to oven and bake 25 to 30 minutes, until top is lightly brown
  8. Cool completely before cutting into squares.
