Have all ingredients at room temperature (68-70 degrees).
Position rack in the lower third of the oven and preheat to 350 degrees.
Grease an 8 ½ X 4 ½ -inch (6cup) loaf pan.
Whisk together thoroughly:
- 1 1/3 cups all purpose flour
- ¾ teaspoon salt
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
In a large bowl, beat on high speed until lightened in color and texture, 2- 3 minutes:
- 5 1/3 tablespoons unsalted butter
- 2/3 cup sugar
Beat in the flour mixture until blended and the consistency of brown sugar. Gradually beat in: 2 large eggs, lightly beaten
Fold in just until combined:
1 cup mashed very ripe bananas (about 2)
½-¾ cup coarsely chopped PECAN YUMMIES
Scrape the batter into the pan and spread evenly. Sprinkle on top of uncooked batter a generous amount (½-¾ cup) of YUMMIE CRUMMIES.
Bake until a toothpick inserted into the center comes out clean, 50- 60 minutes. Let cool in the pan on a rack for 5-10 minutes before unmolding to cool completely on the rack.
